Ingredients

  • 1 Tbsp. palm oil
  • 1 Tbsp. olive oil
  • 1 onion
  • 1 garlic clove
  • 2 tomatoes
  • 2 tsp. coriander
  • 1 tsp. chopped parsley
  • 1/4 tsp. red pepper sauce
  • 3 c. uncooked, shelled shrimp
  • 2 c. coconut milk

Instructions

  1. Cook onion and garlic in oil until translucent.
  2. Add chopped tomatoes, coriander, hot pepper sauce, and shrimp.
  3. Simmer until shrimp turns pink.
  4. Pour in coconut milk and cook briefly.
  5. Serve with rice.
