Ingredients

  • 5 lb. red potatoes
  • 1 lb. Velveeta cheese
  • 1 lb. peeled shrimp
  • 1 can cream of mushroom soup
  • 1/2 cup chopped green onions
  • 1/2 block margarine
  • 1/2 tsp. salt

Instructions

  1. Peel and slice the red potatoes into 1/4 inch thick slices.
  2. Bring a large pot of water to a boil with 1/2 teaspoon of salt, then add the sliced potatoes.
  3. Cook the potatoes until tender but not mushy, then drain and set aside.
  4. In a separate pot, melt the margarine over medium heat.
  5. Add the peeled shrimp to the melted margarine and sauté for 10 minutes.
  6. Add chopped green onions to the shrimp and cook for an additional 5 minutes.
  7. Stir in the can of cream of mushroom soup and heat until bubbly.
  8. Lower the heat and add the Velveeta cheese in chunks, stirring until melted and smooth.
  9. Layer half of the sliced potatoes in a baking dish, then spread half of the shrimp mixture over them.
  10. Repeat with the remaining potatoes and shrimp mixture, creating two layers.
  11. Bake the casserole at 350°F until heated through, about 20 minutes.
