Instructions

  1. Cut merlitons in half and remove seeds.
  2. Parboil until fork-tender.
  3. Scoop out the meat and set aside.
  4. Preheat oven and prepare a baking sheet with greasing.
  5. In a skillet, melt butter and sauté minced onion, chopped celery, and minced garlic until tender.
  6. Add peeled, deveined small raw shrimp and cook until pink.
  7. Remove from heat and mix in squeezed wet bread, grated Parmesan cheese, minced parsley, sliced green onions, salt, pepper, and cayenne.
  8. Stuff the merliton shells with the shrimp mixture.
  9. Sprinkle with Italian bread crumbs on top.
