Ingredients

  • 2 lb. carrots, sliced
  • 10 oz. tomato soup
  • 3/4 c. sugar
  • 3/4 c. wine vinegar
  • 1/4 c. oil
  • 1 tsp. prepared mustard
  • 1 large onion
  • 1 medium green pepper
  • 4 stalks celery
  • salt and pepper

Instructions

  1. Dice the onion, green pepper, and celery.
  2. Set aside the diced vegetables.
  3. Cook the carrots until tender.
  4. Drain the cooked carrots.
  5. Combine the tomato soup, sugar, wine vinegar, oil, and prepared mustard in a saucepan. Bring to a boil.
  6. Reduce heat and simmer for 10 minutes.
  7. Pour the sauce over the cooked carrots.
  8. Serve hot or cold.
