Ingredients

  • 16 oz. package of macaroni
  • 2 red bell peppers, chopped
  • 1 green bell pepper, chopped
  • 1/2 cup chopped green onions
  • 1 stalk celery, chopped
  • 1 tablespoon olive oil
  • 1 cup mayonnaise
  • 1 packet dry vegetable soup mix

Instructions

  1. Bring a large pot of lightly salted water to a boil.
  2. Add the macaroni and cook for 8 to 10 minutes or until al dente.
  3. Drain the pasta and rinse with cold water until no longer hot.
  4. Transfer the noodles to a large bowl.
  5. Stir in the chopped red and green bell peppers, green onions, celery, and olive oil.
  6. Mix in the mayonnaise and vegetable soup mix.
  7. Mix well and refrigerate for a few hours before serving.
