Simple Oven Roast Beef

Ingredients

  • 3 pounds boneless beef bottom round trimmed of excess fat
  • salt
  • black pepper
  • 1 teaspoon garlic powder optional
  • 2 tablespoons extra virgin olive oil

Instructions

  1. Season beef liberally on all sides with salt and pepper. Allow beef to stand at room temperature for 30 minutes before roasting.
  2. Preheat oven to 400° F.
  3. Line a roasting pan with aluminum foil and position a roasting rack inside.
  4. Set beef in center of roasting rack. Rub exposed surface with olive oil. Sprinkle top with garlic powder, if desired.
  5. Roast beef for 20 minutes on middle rack of oven.
  6. Reduce oven temperature to 250°F. Continue roasting beef until meat reaches an internal temperature of 135-140°F for medium doneness, 90-120 minutes. (Pro tip: Roasting at a higher temperature allows for outside to brown nicely, but leads to more moisture loss. Lowering temperature midway allows for rest of meat to cook through and retain more moisture.)
  7. Check to see that beef is roasted to desired doneness. Remove from oven or add time as needed.
  8. Allow beef to rest for 10 minutes. The internal temperature should reach 145°F.
  9. Transfer beef to a serving platter. Carve and serve.
