Simple Oven Roast Beef

- Season beef liberally on all sides with salt and pepper. Allow beef to stand at room temperature for 30 minutes before roasting.
- Preheat oven to 400° F.
- Line a roasting pan with aluminum foil and position a roasting rack inside.
- Set beef in center of roasting rack. Rub exposed surface with olive oil. Sprinkle top with garlic powder, if desired.
- Roast beef for 20 minutes on middle rack of oven.
- Reduce oven temperature to 250°F. Continue roasting beef until meat reaches an internal temperature of 135-140°F for medium doneness, 90-120 minutes. (Pro tip: Roasting at a higher temperature allows for outside to brown nicely, but leads to more moisture loss. Lowering temperature midway allows for rest of meat to cook through and retain more moisture.)
- Check to see that beef is roasted to desired doneness. Remove from oven or add time as needed.
- Allow beef to rest for 10 minutes. The internal temperature should reach 145°F.
- Transfer beef to a serving platter. Carve and serve.
