Ingredients

  • 1 medium green pepper
  • 1 small onion
  • 2 medium zucchinis
  • 2 large chicken breasts boned and skinned
  • 2 Tbsp. all-purpose flour
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp. salad oil
  • 1/2 tsp. sugar
  • 3/4 (15 oz.) jar spaghetti sauce

Instructions

  1. Cut green pepper into bite-sized pieces.
  2. Slice the onion.
  3. Cut zucchini lengthwise into quarters and then into 3/4-inch chunks.
  4. Lightly coat chicken breasts with flour, salt, and pepper.
  5. Heat salad oil in a skillet over medium heat.
  6. Cook chicken breasts until browned and cooked through, then remove from skillet.
  7. In the same skillet, add green pepper, onion, and zucchini; sauté until tender.
  8. Return chicken to the skillet and pour spaghetti sauce over top.
  9. Simmer until the sauce is heated through and slightly thickened.
  10. Sprinkle mozzarella cheese over the dish and cover until cheese melts.
  11. Serve hot, garnished as desired.
