Ingredients

  • 1 1/4 cups yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 to 2 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1 cup buttermilk
  • 1/4 cup vegetable oil

Instructions

  1. Combine the cornmeal, flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. Add the beaten egg, buttermilk, and 3 tablespoons of vegetable oil to the dry ingredients, stirring just until the dry ingredients are moistened.
  3. Pour the remaining 1 tablespoon of vegetable oil into an 8-inch cast-iron skillet and place it in the oven at 425°F for 5 minutes.
  4. Remove the skillet from the oven and spoon the batter into it.
  5. Bake for 20 minutes or until the cornbread is lightly browned.
