- Combine the cornmeal, flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Add the beaten egg, buttermilk, and 3 tablespoons of vegetable oil to the dry ingredients, stirring just until the dry ingredients are moistened.
- Pour the remaining 1 tablespoon of vegetable oil into an 8-inch cast-iron skillet and place it in the oven at 425°F for 5 minutes.
- Remove the skillet from the oven and spoon the batter into it.
- Bake for 20 minutes or until the cornbread is lightly browned.
