Ingredients

  • 3 medium potatoes, peeled and sliced
  • 1 large onion, sliced
  • 1 large green pepper, sliced
  • 1/2 cup uncooked rice
  • margarine
  • salt
  • pepper
  • 1 can tomatoes
  • 8 to 10 pork chops

Instructions

  1. Trim fat and bone from pork chops.
  2. Layer the potatoes, onion, green pepper, uncooked rice, and canned tomatoes in a large baking dish in the order given in the recipe.
  3. Arrange pork chops on top.
  4. Sprinkle with salt and pepper and pour the tomato sauce over the chops.
  5. Bake in a 450° oven for 1 hour (covered), then in a 375° oven for 30 minutes (uncovered).
