Hearty slow-cooked lamb chops wrapped in bacon, with tender potatoes and carrots, infused with rosemary, garlic, and mushroom flavors for a comforting family meal.

Ingredients

  • 4 bacon strips
  • 4 lamb shoulder blade chops, trimmed
  • 2 1/4 cups thinly sliced peeled potatoes
  • 1 cup thinly sliced carrots
  • 1/2 teaspoon dried rosemary, crushed
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup chopped onion
  • 2 garlic cloves, minced
  • 1 can cream of mushroom soup
  • 1/3 cup milk

Instructions

  1. Wrap bacon around lamb chops; secure with toothpicks.
  2. Place in slow cooker, cover, and cook on high for 1 to 1 1/2 hours.
  3. Remove chops, discard toothpicks and bacon.
  4. Drain liquid from slow cooker.
  5. Add potatoes and carrots to the slow cooker.
  6. Top with lamb chops.
  7. Sprinkle with dried rosemary, garlic powder, salt, pepper, chopped onion, and minced garlic.
  8. In a separate bowl, mix cream of mushroom soup with milk and sliced mushrooms.
  9. Pour the mushroom mixture over the ingredients in the slow cooker.
  10. Cover and cook on low for additional 4-6 hours until vegetables are tender.
