Slow-Cooked Lamb Chops
Hearty slow-cooked lamb chops wrapped in bacon, with tender potatoes and carrots, infused with rosemary, garlic, and mushroom flavors for a comforting family meal.
Ingredients
- 4 bacon strips ⓘ
- 4 lamb shoulder blade chops, trimmed ⓘ
- 2 1/4 cups thinly sliced peeled potatoes ⓘ
- 1 cup thinly sliced carrots ⓘ
- 1/2 teaspoon dried rosemary, crushed ⓘ
- 1/4 teaspoon garlic powder ⓘ
- 1/4 teaspoon salt ⓘ
- 1/4 teaspoon pepper ⓘ
- 1/4 cup chopped onion ⓘ
- 2 garlic cloves, minced ⓘ
- 1 can cream of mushroom soup ⓘ
- 1/3 cup milk
Instructions
- Wrap bacon around lamb chops; secure with toothpicks.
- Place in slow cooker, cover, and cook on high for 1 to 1 1/2 hours.
- Remove chops, discard toothpicks and bacon.
- Drain liquid from slow cooker.
- Add potatoes and carrots to the slow cooker.
- Top with lamb chops.
- Sprinkle with dried rosemary, garlic powder, salt, pepper, chopped onion, and minced garlic.
- In a separate bowl, mix cream of mushroom soup with milk and sliced mushrooms.
- Pour the mushroom mixture over the ingredients in the slow cooker.
- Cover and cook on low for additional 4-6 hours until vegetables are tender.
