Ingredients

  • 16 oz. elbow macaroni
  • 2 eggs
  • 12 oz. can evaporated milk
  • 10 3/4 oz. can condensed Cheddar cheese soup
  • 1 1/2 cups milk
  • 16 oz. shredded Cheddar cheese

Instructions

  1. Cook the elbow macaroni according to package directions until al dente. Drain and place in a 3-quart slow cooker.
  2. In a separate bowl, beat the eggs.
  3. Add the evaporated milk, condensed Cheddar cheese soup, and milk to the eggs, mixing well.
  4. Pour the mixture over the cooked macaroni in the slow cooker.
  5. Stir in 3 cups of shredded Cheddar cheese, reserving 1 cup for topping.
  6. Cover and cook on low for about 2 hours, stirring occasionally.
  7. During the last 15 minutes, sprinkle the remaining shredded Cheddar cheese on top and let it melt.
  8. Serve hot, garnished with additional toppings if desired.
