Ingredients

  • 6 pork chops or lamb
  • 2 lemons, thinly sliced (unpeeled)
  • 1 large sweet onion
  • 1 or 2 green peppers, sliced in rings
  • 1 tsp. salt
  • 2 cups tomato juice

Instructions

  1. Place the chops in a covered skillet.
  2. Top the chops with lemon slices, sliced onion, green pepper rings, and salt.
  3. Pour tomato juice over all the ingredients.
  4. Simmer until the meat is cooked through and tender.
  5. Serve with rice or mashed potatoes and a tossed salad.
