Snake Meat
Ingredients
- 1 cup mild onion ⓘ
- 1 cup celery ⓘ
- 1 cup mushroom ⓘ
- 1 cup fresh zucchini ⓘ
- 1 cup fresh tomato, any variety ⓘ
- 1 sweet red pepper ⓘ
- 1 green bell pepper ⓘ
- 1 (8 ounce) can black olives ⓘ
- Dressing ⓘ
- 2/3 cup white wine vinegar
- 4 crushed garlic cloves ⓘ
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil ⓘ
- 1/2 teaspoon coarse black pepper
- 1 1/3 cups olive oil ⓘ
- 3 teaspoons lemon juice ⓘ
Instructions
- Dice all vegetables small.
- Toss all diced vegetables together in a medium bowl.
- Blend dressing ingredients together with a wire whisk in a small bowl.
- Pour dressing over vegetables and chill to marinate at least 4 hours.
- Serve with tortilla chips or buttered toast points.
