A crunchy, flavorful green bean salad with chopped eggs, tangy vinaigrette, and a creamy mayonnaise-mustard dressing, perfect for picnics, potlucks, or family gatherings.

Ingredients

  • 2 qt. jars green beans, drained
  • 1/2 cup onion, chopped
  • 2/3 cup salad oil
  • 1/2 cup vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 5 hard-boiled eggs, chopped
  • 1/3 cup mayonnaise
  • 1 teaspoon mustard
  • 2 teaspoons vinegar

Instructions

  1. Combine green beans, chopped onion, salad oil, 1/2 cup vinegar, salt, and pepper in a bowl.
  2. Toss well to coat ingredients evenly.
  3. Cover and chill the mixture overnight.
  4. Next day, drain the beans.
  5. Mix the chopped hard-boiled eggs, mayonnaise, mustard, and 2 teaspoons vinegar to prepare the egg mixture.
  6. Toss the drained beans with bacon pieces.
  7. Make a well in the center of the bean mixture and fill it with the egg mixture.
