- Cut the head off the turtle as close to the jaw as possible and let it bleed well.
- Tie it with rope by the back leg and hang it up to drain.
- Put the whole turtle in scalding water (shell and all) for about 5 to 10 minutes.
- Remove the turtle and scrub it well with a good stiff brush.
- Pull toenails and cut the shell away with a very sharp knife.
- Get all the white meat from the back of the shell.
- Remove internal organs.
- Parboil the meat until tender.
- Remove the meat and skin it.
- Use the broth for stew or soup.
