Ingredients

  • 2 cups cooked turtle meat
  • 6 hard-cooked egg yolks
  • 2 tablespoons butter
  • 2 cups cream
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • dash of allspice
  • dash of nutmeg

Instructions

  1. Cut the head off the turtle as close to the jaw as possible and let it bleed well.
  2. Tie it with rope by the back leg and hang it up to drain.
  3. Put the whole turtle in scalding water (shell and all) for about 5 to 10 minutes.
  4. Remove the turtle and scrub it well with a good stiff brush.
  5. Pull toenails and cut the shell away with a very sharp knife.
  6. Get all the white meat from the back of the shell.
  7. Remove internal organs.
  8. Parboil the meat until tender.
  9. Remove the meat and skin it.
  10. Use the broth for stew or soup.
