Ingredients

  • 1 lb dried navy beans
  • 6 cups chicken broth
  • 1 tablespoon chicken base
  • 1 teaspoon Mrs. Dash seasoning mix
  • 1 tablespoon oil
  • 2 cups onions, diced
  • 6 garlic cloves, minced
  • 3 cups chicken breasts, diced
  • 1 (4 ounce) can green chilies
  • 4 teaspoons ground cumin
  • 2 teaspoons ground oregano
  • 1 teaspoon cayenne
  • 3 cups monterey jack cheese, shredded
  • 1 cup sour cream

Instructions

  1. Cook beans in broth with base and seasoning for 2 hours or until beans are tender.
  2. Brown onion, garlic and chicken in oil. Add to bean mixture.
  3. Simmer for 30 minutes. Add chiles, remaining seasonings, cheese and sour cream.
