Ingredients

  • 18 oz. Pillsbury refrigerated sugar cookies
  • 4 eggs
  • 1 1/2 cups sugar
  • 1/4 cup all purpose flour
  • 1 tsp. baking powder
  • 1/4 cup lemon juice
  • 1 to 2 tbsp. powdered sugar

Instructions

  1. Preheat oven to 350°F.
  2. Slice the cookie dough as directed on the package.
  3. Arrange slices in the bottom of an ungreased 13 x 9 inch pan.
  4. Lightly flour your fingers and press the dough evenly in the pan.
  5. Bake at 350°F for 15 to 20 minutes or until light golden brown.
  6. In a separate bowl, beat the eggs slightly.
  7. Add sugar, flour, baking powder, and lemon juice to the eggs and mix well.
  8. Pour the lemon mixture over the baked cookie crust.
  9. Bake again at 350°F until the filling is set, about 20 minutes.
  10. Allow to cool, then dust with powdered sugar before serving.
