  • 1 pkg. Lipton Spanish rice
  • 2 c. water
  • 1 Tbsp. butter
  • 1 to 2 lb. ground turkey
  • 8 oz. taco sauce
  • 1 jar salsa
  • 1 pkg. taco seasoning
  • 12 oz. taco cheese or Cheddar cheese
  • chopped lettuce
  • chopped green onions
  • sour cream

Instructions

  1. Brown meat in a skillet.
  2. Prepare Spanish rice as directed on the package.
  3. Spread 2 tablespoons of taco sauce in a 13 x 9-inch pan.
  4. Lay out a flour tortilla.
  5. Place 2 tablespoons of rice, 2 tablespoons of cooked meat, cheese, and salsa on the tortilla.
  6. Roll the tortilla side to side, enclosing the filling in the center.
  7. Fold the edges over like an envelope and place fold side down in the pan.
  8. Repeat with remaining tortillas and fillings until all are in the pan.
  9. Cover the assembled tacos with taco sauce and cheese.
  10. Microwave for 3 minutes or bake at 350°F for 15 minutes.
  11. Remove from oven or microwave and serve topped with chopped lettuce, green onions, and sour cream if desired.
