Sopa Paraguaya is a savory Paraguayan cornbread with cheesy, onion flavors, perfect as a hearty snack or side dish for family gatherings and festive meals.

Ingredients

  • 1 lb. cornmeal
  • 1/2 lb. white cheese
  • 1/2 lb. onions
  • 1/2 c. margarine
  • 3 c. milk
  • 4 eggs
  • salt to taste

Instructions

  1. Saute onions in margarine until translucent.
  2. Remove from heat and add milk, cornmeal, and cheese to the onions.
  3. Beat egg yolks separately and fold into the mixture.
  4. Beat egg whites until stiff peaks form and carefully fold into the mixture.
  5. Pour the batter into a greased 9 x 13-inch baking dish.
  6. Bake in a 375°F oven until the top is light gold.
  7. Cut into squares and serve.
