- Set aside the fried tortillas.
- Take a flat fried tortilla and spread or place the refried beans on top.
- Add crumbled white cheese, diced tomatoes, and chopped lettuce.
- Squeeze lemon juice over the toppings.
- Add salt to taste.
- Serve immediately, optionally with Mexican rice and Pico de Gallo.
