Sopos are crispy fried tortillas topped with refried beans, fresh vegetables, cheese, and a squeeze of lemon, offering a flavorful and satisfying Mexican-style snack or meal.

Ingredients

  • 12 corn tortillas
  • oil
  • 3 cups refried beans
  • 3 large tomatoes
  • 1/2 head lettuce
  • white cheese (Queso Blanco)
  • lemon
  • salt

Instructions

  1. Fry the refried beans until they are dry and no liquid remains.
  2. Set aside the fried beans.
  3. Fry the corn tortillas flat until they are hard and crispy.
  4. Set aside the fried tortillas.
  5. Take a flat fried tortilla and spread or place the refried beans on top.
  6. Add crumbled white cheese, diced tomatoes, and chopped lettuce.
  7. Squeeze lemon juice over the toppings.
  8. Add salt to taste.
  9. Serve immediately, optionally with Mexican rice and Pico de Gallo.
