Ingredients

  • 4 large potatoes, peeled and cubed
  • 1/4 cup water
  • 1/2 can condensed Cheddar cheese soup
  • 1 tablespoon snipped chives
  • paprika
  • 1/8 teaspoon pepper
  • 1/2 cup sour cream
  • 1/2 cup half and half
  • 1/2 teaspoon garlic salt
  • 1/2 cup Cheddar cheese, shredded

Instructions

  1. Combine peeled and cubed potatoes with water in a microwave-safe casserole. Cover with a lid and microwave on High for 12 to 14 minutes, stirring once.
  2. Stir in condensed Cheddar cheese soup, sour cream, half and half, snipped chives, and garlic salt. Microwave uncovered on High for 4 to 5 minutes.
  3. Stir once more. Sprinkle shredded Cheddar cheese and paprika over the top.
  4. Let stand, covered, for about 5 minutes or until the cheese melts.
  5. Sprinkle with parsley and pepper before serving.
