- Combine peeled and cubed potatoes with water in a microwave-safe casserole. Cover with a lid and microwave on High for 12 to 14 minutes, stirring once.
- Stir in condensed Cheddar cheese soup, sour cream, half and half, snipped chives, and garlic salt. Microwave uncovered on High for 4 to 5 minutes.
- Stir once more. Sprinkle shredded Cheddar cheese and paprika over the top.
- Let stand, covered, for about 5 minutes or until the cheese melts.
- Sprinkle with parsley and pepper before serving.
