- Wash and dry the chicken pieces.
- In a Dutch oven, fry the bacon until crisp. Remove the bacon and set aside.
- Add the chicken to the Dutch oven and brown well on all sides.
- Remove the browned chicken and transfer to a 2-quart casserole dish.
- Add sliced onion, chopped shallots or onions, poultry seasoning, salt, and black pepper to the Dutch oven and cook until fragrant.
- Layer peeled and sliced potatoes over the chicken and seasonings.
- Sprinkle chopped parsley and green onions over the casserole.
- Top with the cooked bacon crumbles.
- Bake in the oven at 350°F (175°C) for about 45-60 minutes until potatoes are tender and chicken is cooked through.
