Ingredients

  • 2 1/2 to 3 1/2 lb. frying chicken, cut up
  • 1/2 lb. bacon
  • 4 medium potatoes
  • 1 large onion, thinly sliced
  • 1 tsp. poultry seasoning
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 cup chopped shallots, green onions or onions
  • 2 Tbsp. chopped fresh parsley

Instructions

  1. Wash and dry the chicken pieces.
  2. In a Dutch oven, fry the bacon until crisp. Remove the bacon and set aside.
  3. Add the chicken to the Dutch oven and brown well on all sides.
  4. Remove the browned chicken and transfer to a 2-quart casserole dish.
  5. Add sliced onion, chopped shallots or onions, poultry seasoning, salt, and black pepper to the Dutch oven and cook until fragrant.
  6. Layer peeled and sliced potatoes over the chicken and seasonings.
  7. Sprinkle chopped parsley and green onions over the casserole.
  8. Top with the cooked bacon crumbles.
  9. Bake in the oven at 350°F (175°C) for about 45-60 minutes until potatoes are tender and chicken is cooked through.
