Ingredients

  • 2 eggs
  • 3/4 cup brown sugar
  • 3/4 cup light molasses
  • 3/4 cup melted shortening
  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons ginger
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup boiling water

Instructions

  1. Add beaten eggs to the brown sugar, molasses, and melted shortening and mix well.
  2. Combine the dry ingredients—flour, baking powder, baking soda, ginger, cinnamon, cloves, nutmeg, and salt—in a separate bowl.
  3. Gradually add the dry ingredients to the wet mixture, mixing thoroughly.
  4. Stir in the boiling water until the batter is smooth.
  5. Pour the batter into a greased baking pan and bake at 350°F (175°C) for about 25 minutes or until a toothpick inserted in the center comes out clean.
