Ingredients

  • 1 1/2 lb. boneless sirloin steak
  • 2 tsp. vegetable oil
  • 1 c. sliced onions
  • 2 garlic cloves, minced
  • 1 1/2 c. canned crushed tomatoes
  • 1 tsp. salt
  • 1/2 tsp. chili powder
  • 1/8 tsp. ground red pepper
  • 1 c. thinly sliced green cabbage
  • 8 oz. drained canned chickpeas
  • 1/4 c. chopped green or red bell peppers
  • 1 tbsp. chopped fresh parsley

Instructions

  1. Broil the steak on a rack in a broiling pan for 5 minutes on each side until browned.
  2. Cut the steak into 2-inch pieces and set aside.
  3. In a large skillet or pot, heat vegetable oil over medium heat.
  4. Add sliced onions and minced garlic; cook until onions are translucent.
  5. Stir in crushed tomatoes, salt, chili powder, and red pepper; simmer for a few minutes.
  6. Add sliced green cabbage, drained chickpeas, and chopped bell peppers.
  7. Return the steak pieces to the skillet, stir to combine.
  8. Simmer everything together for about 10 minutes until flavors meld and vegetables are tender.
  9. Garnish with chopped fresh parsley before serving.
