  1. Boil the hen until she's done, then bone it.
  2. Remove fat and skin from the cooked chicken.
  3. Chop the cooked chicken and mix it with chopped celery and pimento in a large bowl.
  4. Set the mixture aside.
  5. Melt 3 1/2 packages of plain gelatin in 1 cup of chicken stock until fully dissolved.
  6. Add mayonnaise, vinegar, lemon juice, mustard, salad dressing, salt, and pepper to the gelatin mixture.
  7. Mix everything thoroughly and pour into a glass dish.
  8. Chill until set and serve.
