Southerner Pressed Chicken

- Boil the hen until she's done, then bone it.
- Remove fat and skin from the cooked chicken.
- Chop the cooked chicken and mix it with chopped celery and pimento in a large bowl.
- Set the mixture aside.
- Melt 3 1/2 packages of plain gelatin in 1 cup of chicken stock until fully dissolved.
- Add mayonnaise, vinegar, lemon juice, mustard, salad dressing, salt, and pepper to the gelatin mixture.
- Mix everything thoroughly and pour into a glass dish.
- Chill until set and serve.
