Ingredients

  • 1 1/2 lb. chicken breast
  • 1 pkg. taco seasoning
  • 3 Tbsp. olive oil
  • 1 large onion
  • 1/2 red pepper
  • 1/2 green pepper
  • 6-8 mushrooms
  • 1 lb. penne pasta
  • 1 Tbsp. chili powder

Instructions

  1. Cut chicken into strips or small chunks and coat well with taco seasoning.
  2. Saute the chicken in olive oil until cooked through.
  3. Add chopped onions, red pepper strips, green pepper strips, and sliced mushrooms to the skillet.
  4. Cook all together, seasoning with salt, pepper, and chili powder.
  5. Meanwhile, cook the penne pasta according to package instructions and drain.
  6. Mix the cooked pasta with the chicken and vegetable mixture.
  7. Serve in a pasta bowl and top with sour cream, salsa, and grated cheese.
