A hearty, cheesy enchilada casserole featuring seasoned ground beef, green chilies, and a flavorful sauce, topped with melted cheddar—perfect for family dinners or casual gatherings.

Ingredients

  • 1 1/2 lb. ground beef
  • 1 can chopped green chilies
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1/2 lb. grated Cheddar cheese
  • 1 pkg. (12) flour tortillas
  • 1 can enchilada sauce

Instructions

  1. Brown the ground beef and drain any excess fat.
  2. Add enchilada sauce, cream of mushroom soup, cream of chicken soup, and chopped green chilies to the beef. Simmer for about 5 minutes.
  3. Line the bottom of a casserole dish with flour tortillas.
  4. Spread half of the meat mixture over the tortillas.
  5. Sprinkle half of the grated Cheddar cheese over the meat layer.
  6. Repeat with another layer of tortillas, the remaining meat mixture, and cheese, ending with cheese on top.
  7. Bake at 425°F (220°C) until the cheese melts and is bubbly, about 10 minutes.
