Ingredients

  • 1 lb. spaghetti
  • 2 c. firmly packed parsley leaves
  • 2 Tbsp. fresh basil leaves or 1 tsp. dried basil
  • 3 cloves garlic
  • 3/4 c. olive oil
  • 3 Tbsp. oleo
  • 1/2 c. freshly grated Romano cheese
  • 1/2 c. grated Parmesan cheese
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Cook spaghetti as directed on the package. Drain.
  2. Meanwhile, combine parsley, basil, garlic, olive oil, oleo, Romano cheese, Parmesan cheese, salt, and pepper in an electric blender.
  3. Blend at high speed until the mixture resembles an almost-paste with some specks of parsley visible.
  4. Toss the cooked spaghetti with the pesto until completely coated.
