Spaghetti Squash Carbonara

Ingredients

  • 1 small spaghetti squash, 2 1/2 to 3 pounds
  • 2 Tbsp vegetable oil
  • 1 Tbsp butter
  • 4 ounces smoked ham, julienne strips
  • 1 small onion, chopped
  • 1 medium garlic clove, minced
  • 2 ounces fresh snow peas, julienne
  • 1/4 cup diced red bell pepper
  • 3 large eggs
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Scoop seeds from the squash.
  2. Place squash halves, cut-side-down, in a 9 x 13-inch baking dish with 1/2 inch water.
  3. Bake in a preheated 350°F oven for 35 to 40 minutes until the squash is tender.
  4. Meanwhile, in a medium skillet, heat vegetable oil and butter over medium heat.
  5. Saute smoked ham, chopped onion, and minced garlic until the onion is soft.
  6. Add snow peas and diced red bell pepper; saute for 2 minutes, stirring occasionally.
  7. Remove from heat. In a large bowl, beat eggs with grated Parmesan cheese until blended.
  8. Turn cooked squash halves cut-side-up. Use a fork to pull out strands of squash carefully to avoid tearing the shell.
  9. Add the hot squash strands to the egg mixture and toss well.
  10. Add the warm ham and vegetable mixture to the egg and squash mixture and toss again.
  11. Spoon the mixture into the squash shells. Serve with freshly ground black pepper if desired.
