Ingredients

  • 1 1/2 lb broccoli
  • 6 Tbsp olive oil
  • 1/2 cup minced parsley
  • 3 cloves minced garlic
  • 1 (35 oz) can Italian plum tomatoes, drained and chopped
  • salt and pepper
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 bay leaf
  • 1/3 cup pine nuts
  • 1 lb spaghetti

Instructions

  1. Peel broccoli stems and cut into 3/4-inch slices.
  2. Break broccoli flowerets into small pieces.
  3. Set aside.
  4. In a 10-inch fry pan, heat 4 tablespoons of olive oil.
  5. Add 1/4 cup minced parsley and minced garlic to the pan.
  6. Cook for 1 to 2 minutes without browning.
  7. Add chopped tomatoes to the pan.
  8. Season with salt and pepper to taste.
  9. Add oregano, thyme, and bay leaf.
  10. Lower heat to simmer and cook for 30 minutes, partially covered.
  11. In a small skillet, brown pine nuts in 2 tablespoons of olive oil until golden.
  12. Remove pine nuts and set aside.
  13. Cook spaghetti according to package instructions until al dente.
  14. Drain spaghetti and combine with the sauce.
  15. Serve topped with toasted pine nuts.
