Ingredients

  • 1 lb spaghetti
  • 2 cups Romano cheese
  • 2 eggs
  • 1.5 lb ground shank
  • 2 kernels garlic
  • 2 sprigs parsley
  • 2 Tbsp olive oil

Instructions

  1. Grate 2 cups of Romano cheese and set aside.
  2. Season ground shank with salt and pepper, then add finely chopped garlic, parsley, and eggs.
  3. Mix the meat with the cheese, parsley, and eggs thoroughly.
  4. Form the mixture into small balls.
  5. Fry the meatballs in olive oil until browned and cooked through.
  6. Cook spaghetti until al dente, then drain.
  7. Grate 1 cup of cheese over the cooked spaghetti.
  8. Serve the spaghetti topped with the cooked meatballs and additional cheese if desired.
