  • 2 lb. fresh spinach
  • 1 lb. package defrosted filo dough

Instructions

  2. Salt the spinach lightly and cook for five minutes without adding water.
  3. Cook the chopped onion in 3 tablespoons of butter, salting lightly until soft.
  4. Combine the cooked onion, crumbled feta, cottage cheese, eggs, flour, basil, oregano, salt, and pepper with the cooked spinach, mixing well.
  5. Spread melted butter on a 9 x 13-inch baking pan.
  6. Place a sheet of filo dough in the pan, letting it hang outside the edges.
  7. Fold the edges of the filo over the filling and brush generously with melted butter.
  8. Layer more sheets of filo, brushing each with butter, to build a stack of about 8 leaves.
  9. Spread half of the filling over the layered filo in the pan.
  10. Repeat with another stack of about 8 filo sheets, then spread the remaining filling over the top, spreading to the edges.
  11. Fold the excess filo down along the edges to make tidy corners.
  12. Add more layers of filo and butter on top as the pan allows, finishing with a buttered top layer.
  13. Sprinkle with a tablespoon of whole anise or fennel seeds if desired.
  14. Bake uncovered at 375°F (190°C) for approximately 45 minutes, until golden brown.
