Ingredients

  • 1 can kidney beans, drained
  • 1 lb ground beef
  • 1 package taco seasoning
  • 1 can mushrooms
  • 1 (8 oz) jar taco sauce
  • jalapeno peppers, chopped fine
  • 1 cup instant rice
  • 1 (8 oz) package Cheddar cheese
  • 1 cup Mozzarella cheese, shredded

Instructions

  1. Brown ground beef in a skillet.
  2. Drain excess fat from the skillet.
  3. Add kidney beans, taco seasoning, mushrooms, taco sauce, chopped jalapenos, and instant rice to the skillet.
  4. Simmer the mixture until heated through and flavors meld.
  5. Pour the mixture into a baking dish.
  6. Sprinkle Cheddar and Mozzarella cheese evenly over the top.
  7. Bake at 350°F for 30 minutes until cheese is melted and bubbly.
