  • 2 large green peppers
  • 1 lb lean ground beef
  • 1 onion
  • 1 clove garlic
  • 1 (6 oz) can tomato paste

  • 1 can green chilies and tomatoes
  • 1/4 cup Parmesan cheese

Instructions

  1. Halve the green peppers lengthwise and remove the cores.
  2. Parboil the peppers for 7 to 8 minutes until just beginning to get tender.
  3. Drain the peppers and place them in a baking dish.

  7. Stuff each pepper with approximately two-thirds of the meat mixture.
  8. To the remaining meat mixture, add the raw rice, green chilies and tomatoes, and cook until the rice is tender, about 6 to 7 minutes.
  9. Spoon the rice mixture around the stuffed peppers in the baking dish.
  10. Sprinkle Parmesan cheese on top of the peppers.
  11. Bake the assembled dish for 30 minutes until the peppers are fully cooked and tender.
