Ingredients

  • 8 oz. jar Dijon mustard
  • 1/2 cup cooking oil
  • 2 Tbsp. dry red wine
  • 2 cloves garlic, minced
  • 1 tsp. dried rosemary
  • 1 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried thyme
  • 1/4 tsp. pepper
  • leg of lamb, boned and butterflied

Instructions

  1. Combine Dijon mustard, cooking oil, red wine, minced garlic, dried rosemary, dried basil, dried oregano, dried thyme, and pepper in a bowl.
  2. Place the boned and butterflied leg of lamb in a shallow dish.
  3. Spread the mustard mixture evenly over the lamb.
  4. Cover and marinate for 1 hour at room temperature or overnight in the refrigerator.
  5. Grill the lamb over medium coals for 50 minutes to 1 hour, turning frequently, until done.
  6. Do not overcook the lamb.
