Ingredients

  • 3/4 cup oleo or butter
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 can pumpkin
  • 2/3 cup water
  • 3 1/2 cups unbleached flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup chopped maraschino cherries
  • 2/3 cup chopped walnuts

Instructions

  1. Cream together the oleo or butter and sugar.
  2. Add eggs one at a time, beating thoroughly after each addition.
  3. Mix in pumpkin and water until well blended.
  4. In a separate bowl, combine flour, baking powder, baking soda, and salt.
  5. Gradually stir dry ingredients into the pumpkin mixture, mixing until batter is well blended.
  6. Stir in chopped maraschino cherries and chopped walnuts.
  7. Grease and flour 2 loaf pans, then pour batter into them.
  8. Bake at 350°F for 70 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool for 15 minutes before removing from pans.
