Speedy, Green Rice

Ingredients

  • 1 lb fresh spinach, washed and chopped or 1 (10 ounce) package frozen chopped spinach
  • 14 cup butter
  • 3 cups instant rice
  • 2 13 cups water
  • 2 teaspoons salt
  • 12 teaspoon oregano
  • 6 green onions, sliced
  • 2 tablespoons parsley, chopped
  • 2 tablespoons lemon juice
  • 12 cup parmesan cheese, grated

Instructions

  1. If using fresh spinach, drain well.
  2. If using frozen spinach, thaw and drain well.
  3. In a large pan, saute spinach in butter for 2 to 3 minutes.
  4. Stir in rice, water, salt and oregano; bring to a boil.
  5. Cover and simmer until all liquid is absorbed, about 5 minutes.
  6. Stir in onion, lemon juice and parsley; heat through.
  7. Sprinkle with parmesan cheese when serving.
