Ingredients

  • 4 slices bacon
  • 1/2 cup chopped onion
  • 1 (10 3/4 oz.) can condensed cream of potato soup
  • 1 cup evaporated milk
  • 1/2 cup water
  • 1 (8 oz.) can whole kernel corn
  • 1 cup diced cooked ham
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a 3-quart pan over medium heat, cook bacon until crisp. Drain on paper towels.
  2. Save 1 tablespoon of bacon drippings.
  3. In the same pan, sauté chopped onion in bacon drippings until tender.
  4. Add condensed cream of potato soup, evaporated milk, and water to the pan. Stir to combine and heat through.
  5. Drain the can of whole kernel corn and add to the soup mixture.
  6. Stir in diced cooked ham and cook until heated through.
  7. Sprinkle chopped fresh parsley on top before serving.
