Ingredients

  • 4 qt. plums
  • 2 c. vinegar
  • 6 c. sugar
  • 1 Tbsp. cloves
  • 1 Tbsp. cinnamon
  • 1 tsp. allspice

Instructions

  1. Wash and dry the plums.
  2. Place the plums in a stone jar or bowl.
  3. Boil vinegar, sugar, cloves, cinnamon, and allspice together for 10 minutes.
  4. Pour the hot mixture over the plums.
  5. Cover and let stand overnight.
  6. Drain off the liquid and bring it to a boil.
  7. Add the boiling syrup back to the plums and cook until the plums are clear but not broken.
  8. Pack the hot plums and syrup into clean, hot Ball jars, filling them with the pickling syrup.
  9. Seal the jars immediately.
