Ingredients

  • 1 lb candied cherries
  • 1 lb dates
  • 4 slices candied pineapple
  • 2 cups pecans
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 4 eggs

Instructions

  1. Beat the eggs in a mixing bowl.
  2. Add the candied cherries, dates, candied pineapple slices, and all sifted dry ingredients to the beaten eggs.
  3. Mix in the vanilla extract.
  4. Pour the batter into a tube pan.
  5. Bake at 325°F for 1 hour 15 minutes to 1 hour 30 minutes until a toothpick inserted in the center comes out clean.
