Ingredients

  • 1 c. unbleached flour
  • 3/4 c. corn meal
  • 2 tsp. baking powder
  • 1 tsp. chili powder
  • 1/2 tsp. dried oregano
  • 1 c. corn
  • 2 scallions, minced
  • 1 c. low-fat milk
  • 2 eggs
  • 2 Tbsp. honey
  • 1 Tbsp. olive oil

Instructions

  1. Coat an 8 x 8-inch baking dish with nonstick cooking spray. In a large bowl, mix the flour, corn meal, baking powder, chili powder and oregano.
  2. Stir in the corn and scallions.
