Ingredients

  • 11 oz. can mandarin oranges
  • 1 1/2 cups sifted flour
  • 1/2 cup sugar
  • 1 3/4 teaspoons baking powder
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon allspice
  • 1/3 cup butter
  • 1/2 cup milk
  • 1 egg

Instructions

  1. Drain mandarin oranges thoroughly and cut into smaller pieces.
  2. In a large bowl, combine flour, sugar, baking powder, nutmeg, salt, and allspice.
  3. Cut in butter until the mixture resembles coarse crumbs.
  4. Add milk and beaten egg; stir just until dry ingredients are moistened.
  5. Gently fold in the mandarin orange pieces.
  6. Line muffin pan with paper liners and fill each cup halfway with batter.
  7. Microwave for approximately 3 minutes on High or until muffins test done with a toothpick.
  8. Remove muffins from the pan immediately.
