Ingredients

  • 1 frozen whole boneless turkey, thawed
  • 8 or 10 large garlic cloves
  • 3 Tbsp. rosemary
  • 1 tsp. paprika
  • 1 Tbsp. coarse ground black pepper
  • 1 tsp. coarse kosher salt
  • 2 Tbsp. olive oil

Instructions

  1. Remove the mesh from the turkey and flatten it on a cutting board, skin side down.
  2. Combine garlic, rosemary, black pepper, and salt in a blender.
  3. Turn on the blender and gradually add olive oil until the mixture is chopped coarsely.
  4. Spread half of the garlic mixture over the inside of the turkey.
  5. Reroll the turkey to its original log shape and tie it firmly every two inches.
  6. Spread the remaining garlic mixture on the outside of the turkey.
  7. Place the turkey on a rack in a roasting pan.
  8. Roast at 350°F for 1.5 to 2 hours or until a meat thermometer registers 170°F.
  9. Remove from oven and let stand for 20 minutes.
  10. Remove the strings and slice the turkey before serving.
