Ingredients

  • 2 beaten eggs
  • 3 cups cooked pasta (tiny stars or orzo)
  • 1 (15 1/2 oz.) jar chunky spaghetti sauce
  • 1/3 cup grated Parmesan cheese
  • 1 (10 oz.) package frozen spinach
  • 1/2 cup Ricotta cheese
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Combine eggs, cooked pasta, 1/2 cup spaghetti sauce, and Parmesan cheese in a bowl.
  2. Spread the mixture over the bottom and up the sides of a greased 9-inch pie plate to form a shell.
  3. Cook spinach according to package directions; drain well.
  4. Mix together spinach, Ricotta cheese, and ground nutmeg.
  5. Spoon the spinach mixture into the pasta-lined pie plate.
  6. Spread the remaining spaghetti sauce atop the filling.
  7. Cover the edge of the pie with foil.
  8. Bake at 325°F (160°C) for 30 minutes.
  9. Remove foil, top with mozzarella cheese, and bake for an additional 5 minutes or until the cheese is melted.
