Ingredients

  • 1 1/2 cups Egg Beaters
  • 3/4 cup fat-free (skim) milk
  • 1 tablespoon dried onion flakes
  • 1 tablespoon grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 cup diced pimentos
  • 1/8 teaspoon ground black pepper
  • 1/4 cup plain dry bread crumbs
  • 3/4 cup shredded fat-free Cheddar cheese

Instructions

  1. Sprinkle bread crumbs evenly onto the bottom of a lightly greased 8 x 8 x 2-inch baking dish.
  2. Layer 1/2 cup Cheddar cheese and spinach on top of the bread crumbs.
  3. In a medium bowl, combine Egg Beaters, milk, onion flakes, Parmesan cheese, garlic powder, and black pepper; mix well.
  4. Pour the egg mixture evenly over the spinach and cheese layers.
  5. Top with remaining Cheddar cheese and diced pimentos.
  6. Bake at 350°F for 35 to 40 minutes or until a knife inserted in the center comes out clean.
  7. Let stand for 10 minutes before serving.
