Ingredients

  • 1 3/4 lb. fresh spinach
  • 7 Tbsp. unsalted butter
  • 1 Tbsp. onion, minced
  • 3 Tbsp. Prosciutto, minced
  • 1 c. Ricotta cheese
  • 1/2 c. all-purpose flour
  • 3/4 c. freshly grated Parmesan cheese
  • 1/2 c. freshly grated Pecorino Romano cheese
  • 1 egg

Instructions

  1. Heat 1/4 inch of water in a large saucepan over high heat until boiling.
  2. Cook the spinach, tossing quickly until wilted, about 1 minute.
  3. Drain the spinach and allow to cool slightly; squeeze out as much liquid as possible.
  4. Chop the spinach very finely and set aside.
  5. In a skillet, melt 7 tablespoons of unsalted butter over medium heat.
  6. Add minced onion and cook until translucent.
  7. Add minced prosciutto and cook until lightly browned.
  8. In a bowl, lightly beat the ricotta cheese and mix with the chopped spinach.
  9. Add the beaten egg, grated Parmesan, grated Pecorino Romano, and all-purpose flour to the mixture.
  10. Gently combine until a soft dough forms.
  11. Bring a large pot of salted water to a boil.
  12. Form the dough into small gnocchi shapes and cook in the boiling water until they float, about 2-3 minutes.
  13. Remove the gnocchis with a slotted spoon and serve warm.
