Ingredients

  • 1 can cream of chicken or mushroom soup
  • 3 cups cooked rice
  • 10 oz frozen chopped spinach, thawed and drained
  • 3/4 cup shredded sharp Cheddar cheese
  • 1/4 cup sliced green onions

Instructions

  1. In a 1 1/2-quart casserole, combine all ingredients except pimento and mix well.
  2. Bake at 350°F for 25 minutes or until cheese melts.
  3. Stir before serving.
  4. Garnish with pimento.
