Ingredients

  • 1 pkg. lemon gelatin
  • 3/4 cup hot water
  • 1 tablespoon vinegar
  • 1 cup mayonnaise
  • 1 cup cottage cheese
  • 1 pkg. chopped frozen spinach
  • 1/3 cup celery, finely chopped
  • 1/3 cup onion, finely chopped

Instructions

  1. Dissolve lemon gelatin in hot water and add vinegar and mayonnaise; stir well.
  2. Let the mixture cool, then beat until smooth.
  3. Cook and cool chopped frozen spinach, then drain well.
  4. Add finely chopped celery, onion, cottage cheese, and cooked spinach to the gelatin mixture.
  5. Pour the mixture into a 6-cup mold or a doubled 9 x 12-inch pan.
  6. Chill until the salad is firm and set before serving.
