Ingredients

  • 6 hard-boiled eggs
  • 3 oz. Ricotta cheese
  • 2 Tbsp. chopped cooked spinach
  • 2 Tbsp. grated Parmesan cheese
  • salt

Instructions

  1. Remove shells from the hard-boiled eggs.
  2. Cut eggs in half and remove the yolks.
  3. Mix the yolks with ricotta cheese, cooked chopped spinach, grated Parmesan, salt, pepper, nutmeg, and red pepper, beating until smooth, adding a little cream if necessary.
  4. Spoon or pipe the mixture back into the egg whites.
  5. Sprinkle red pepper on top for garnish.
