Spinach Stuffed Peppers

Colorful stuffed peppers filled with a creamy spinach mixture, perfect for a nutritious and flavorful vegetarian main or side dish suitable for family dinners or gatherings.

Ingredients

  • peppers, tops cut off and seeded
  • 3 Tbsp. whole wheat flour
  • 3 Tbsp. mayonnaise
  • 1/2 onion
  • 3/4 c. milk
  • 2 Tbsp. non-instant powdered milk
  • 3 qt. fresh spinach
  • nutmeg

Instructions

  1. Chop and sauté onions.
  2. Add flour and cook for 2 minutes, stirring constantly.
  3. Gradually add blended milk mixture and stir until smooth.
  4. Stir in spinach until desired consistency is reached.
  5. Steam peppers with tops cut off for 5 to 7 minutes.
  6. Fill peppers with the spinach mixture.
  7. Bake filled peppers for 15 minutes at 350°F.
